Borscht


Its that time of year.

Bring the produce in ladies and gentlemen.

The snow is comin'!

And, beets Beets BEets BEEts BEETs BEETS!

What to do with these beggers?

No, I'm SICK of

PICKLES.

Besides...talk about WORK.

Well let me enlighten you on one of my most favorite findings.

It's a Ukrainian classic dish called Borscht which means "beet soup". Sounds different...lets face it a little gross. But it is good! Just trust me.

When you want a taste of summer garden in the dead of winter you will find it in your bowl of borscht.

Serious.

This soup has energizing powers,

Which only makes sense as it is packed with SUPERFOODS.

Freezer Borscht:

1. Peel Beets.

This doesn't have to be a perfect job! I have made this before without peeling the beets at all and it was still delicious.

2. Grate Beets, Carrots & Onions

Food processer works great. Vitamix will do the job. Or you can hand grate...superwoman.

The amount of beets carrots and onions does NOT have to be an exact science! If you don't have carrots. No worries. Its good with out.

3. Chop fresh dill. I don't know how to emphasize this enough: NO SUBSTITUTES on the fresh dill. This is the secret ingredient to amazingness!

YUM!

4. Add Chopped beet leaves or kale.

You might not have a bowl big enough to mix this in so just fill each freezer bag 1/2 full of leaves. These babies will cook down to nothing so don't feel like all you are going to be eating is beet leaves.

5. Fill Freezer Bags and pack away for that snowy day.

Tip: I write on each bag the additional fixxings for when you warm it up

4 cups chicken broth

2 bay leaves

1 tablespoon Vinegar

3 Tablespoons Ketchup

can of beans (any kind of white bean) , optional

6. Enjoy with a dollop of sour cream or mayonnaise

Borsht

Makes about 16 cups of soup mix

8 cups beet leaves or kale, chopped

8 cups grated beets

1cup grated onions

2 cups grated carrots
